wash the rice and strain the water and keep it aside.
Take a pan add some oil and ghee.add bay leaves and star anise.add onion and salt till it get translucent.Add green chilly saute well..Grind these ingredients(fennel seeds,cloves,cinnamon,cardomom,ginger,garlic).saute these till the raw smell goes.Add cilantro and mint.saute well.Add tomato,and redchilly powder,turmeric.saute well.then add cleaned mushroom and garam masala..stir for sometime. Then add the soaked rice.stir well.Then add coconut milk and water.wait till it get cooked.once it get cooked add raisins,cashews(fried in ghee) and chopped coriander,Now its ready to serve.
- Mushroom will cook very fast.it contains water.so no need to add more water.
- chilly powder and green chilly u can add according to your spice level.
