Onion chili Dosa!!!Easy Dosa!!




Raw rice-11/2 cup
coconut grated-1 cup
cooked rice-1/4 cup
onion-1
green chili-3-4
cumin seeds-1 tsp
cilantro chopped-2 tsp
Soak the raw rice overnight.
Morning grind this with coconut and cooked rice(you can take and keep in refrigerator cooked rice).
Once its done add onion and green chili to this.
Grind till onion become chopped form.Green chili will be well ground by this time.
Add cumin and chopped cilantro to this batter and add salt.
Take the pan and make it like our normal dosa.

No fermentation required.

Nadan fish curry






Fish-7 pieces
Ginger-1 medium piece
Garlic-5 cloves
Small onion-13(for grinding and seasoning)
Green chili-2
Coriander powder-1 tsp
Red chilly powder-2 tsp
Turmeric-1 tsp
Fenugreek powder-1/2 tsp
Coconut grated-1 cup
Coccum-1 big piece
Mustard
Curry leaves
Fenugreek seeds
Oil
Salt

Cut and clean the fish pieces.keep it aside.
Grind ginger,garlic,green chili,shallot to a coarse paste.
Grind coconut and keep it aside.
Take a pan.add oil to it.When it turns hot add ground paste(shallots,ginger,garlic,green chili).
When the raw smell goes add coriander,red chili,turmeric powders,saute for a minute.
Then add ground coconut and coccum.Saute for sometime.
Then add fish pieces and salt.
Add fenugreek powder also to this gravy.close and cook till its done.
Finally season it with shallots(cut),mustard,curry leaves and fenugreek seeds).



  • I used Tilapia(you can use any fleshy fish)
  • Coccum will be good for fish curries.It gives the real sour taste for the curry.I always prefer coccum for fish curries.
  • I used coconut oil.You can use any oil.

MUSHROOM BIRIYANI(KOON BIRIYANI)


Mushroom-1cup
rice-3 cups
onion-1
tomato-1
green chilly-2-3
garlic-3cloves
ginger-1 small piece
fennelseeds-1tsp
cloves-5
cinammon-3
cardomom-4
bayleaves-2
star anise-1/2
red chilly powder-1tsp
turmeric powder-1tsp
garam masala-1 tsp
coconut milk-1/4cup
cilantro
mint
raisin
cashews
oil
ghee
salt
wash the rice and strain the water and keep it aside.
Take a pan add some oil and ghee.add bay leaves and star anise.add onion and salt till it get translucent.Add green chilly saute well..Grind these ingredients(fennel seeds,cloves,cinnamon,cardomom,ginger,garlic).saute these till the raw smell goes.Add cilantro and mint.saute well.Add tomato,and redchilly powder,turmeric.saute well.then add cleaned mushroom and garam masala..stir for sometime. Then add the soaked rice.stir well.Then add coconut milk and water.wait till it get cooked.once it get cooked add raisins,cashews(fried in ghee) and chopped coriander,Now its ready to serve.

  • Mushroom will cook very fast.it contains water.so no need to add more water.
  • chilly powder and green chilly u can add according to your spice level.

BRINJAL MASALA(EGG PLANT MASALA)-VAZHUTHANANGA MASALA



Eggplant-6
green chilly-3
coconut-1/2 cup
onion-1
ginger-1smallpiece
garlic-3cloves
poppy seeds-1tsp
cashews-4-5
tamarind water-1tsp
cilantro-1handfull
corianderpowder-1tbsp
red chilly powder-1tsp
turmeric powder-1tsp
gram masala-1tsp
oil
salt

Take whole egg plant make slit in that.Add a  little salt and Saute in oil for sometime.
Keep it aside.Soak cashews and poppy seeds in water for sometime.
Grind cocnut,green chili,ginger garlic,cashews and poppy seeds to a coarse paste.
Take a pan.Add oil to this(brinjal sauted oil can use).Saute onion till it get translucent.
Add these ground paste saute till the raw smell goes.
Add all powders to this and saute well for sometime.
Add slit egg plants and salt  to this gravy. It should immerse well in to this gravy.Coat well the masala.
Add tamarind water.close and cook till its done.
Finally garnish with cilantro.



Nadan Kerala Fish Roast(Kerala fish roast)



Fish-6-7 pieces
Onion-3
Tomato-2
Ginger-1medium piece
Garlic-10 cloves
Green chili-2-3
Chili powder-1tb spoon
Turmeric powder-1tsp
Fenugreek powder-1tsp
Coriander powder-3tsp
Black Pepper powder-1 tsp
Fennel seeds-1tsp
Lemon juice-1tsp
Curry leaves
Cilantro
Oil
Salt
Marinate the fish pieces with red chili ,turmeric,coriander powder's, fennel seeds,salt and lemon juice  keep for 30 min.fry till its done.
Take oil in a pan(same oil in which the fish fried) and saute the onion till it gets translucent.
Add ginger,garlic,green chili finely chopped to this and saute well.Add the powders,tomatoes and curry leaves to this and saute well.Add salt to taste.Once its saute well add fried fish pieces.Sprinkle black pepper powder.Saute till the masala coat well to this fish  pieces.Once its done ,add chopped cilantro and stir.



  • For frying-Spice Powders(chili,turmeric,coriander)
  • For masala-Spice powders(chili,turmeric,fenugreek,black pepper)
  • You can change the chili amount according to your spice level
